The Beef:

  • Beef rib, whole, deboned 3 kg
  • Cola 1.2 l
  • Liquid smoke 10 ml
  • Brown sugar 250 g
  • Apple cider vinegar 100 ml
  • Knorr Concentrated Chicken Bouillon (6x1L) 40 g
  • Chipotle, paste 20 g

Maple BBQ:

Ranch Dressing:


  • Corn kernels, cooked 500 g
  • Lettuce, mixed 300 g
  • Spring onions sliced 80 g
  1. The Beef:

    • Place the rib in a large oven dish, combine with the braising liquid, cover and cook in a preheated oven for 4 hours at 140°C.
    • Remove and place in a new tray and allow to cool, dice into 3cm pieces and place back in the oven, remove once the meat starts to crisp up.
  2. Maple BBQ:

    • Place the diced beef into the maple BBQ sauce to coat and heat through.
  3. Ranch Dressing:

    • Add all ingredients into a mixing bowl and whisk together to combine.
  4. Salad:

    • To serve, assemble all ingredients, toss with ranch dressing and top with BBQ beef cubes.
