The Dressing:

Pickled Onion:

  • Sugar 125 g
  • Rice Vinegar 200 ml
  • Red onions sliced into rings 150 g

The Salad:

  • Heirloom tomato mix 1500 g
  • Burrata small 5 pc
  • Crispy thin sourdough bread 10 pc
  • Mini basil leaves
  • Pepper
  • Sea salt flakes

Enjoy it with:

  1. The Dressing:

    • Blend first 4 ingredients together, gradually add oils until incorporated, finish the mix with the basil, reserve in chiller until service.
  2. Pickled Onion:

    • Make the red onion pickled by cooking the sugar and rice vinegar together, add the onion slices and cook for 1 more minute. Cool down quickly in the fridge.
  3. The Salad:

    • Cut tomatoes in pieces and season with dressing, and plate.
    • Cut the burrata in half and divide over the tomatoes.
    • Garnish with pickled red onion, sourdough bread, basil leaves, cracked pepper and sea salt flakes.
