Beer Brine:

  • 1 bottle of beer (the darker the better)
  • Orange juice (fresh - juice fr 1 whole orange) 60.0 ml
  • Knorr Professional Chicken Stock Powder (6x1kg) 40.0 g
  • Brown sugar 80.0 g
  • Dried chilies 5.0 g
  • Cumin seeds (optional) 0.5 tbsp
  • Cardamom pods (optional) 0.5 tbsp
  • Peel from the orange (remove white pith)

Preparation

  1. Beer Brine:

    • Combine all ingredients in a bowl.
    • Brine for 1kg chicken wings.
    • Brine overnight.
    • Change spice or add desired herbs.
    • This brine is best for oven baked wings.
    • We used halal non alcoholic beer in this recipe but it would be a lot more flavorful using the real darker lagers esp for bbqs.
