Salad:

  • Baby cos lettuce, leaves, separated, washed and spun dry 2.0 kg
  • Smoked chicken, sliced into thin strips 1.0 kg
  • Apples, thinly sliced 4.0 pc
  • Jalapenos, thinly sliced 100.0 g
  • Red onions, diced 100.0 g
  • Avocados, diced 1.0 kg

Garnish:

  • Pomegranates, seeds 200.0 g
  • Almonds slivers, roasted 250.0 g

Preparation

  1. Ranch Dressing:

    • To make the dressing, combine all the ingredients in the blender or food processor. Blend until the dressing becomes a smooth puree.
    • Taste and adjust seasoning. Transfer to a large squeeze bottle, store in the chiller until ready to use.
  2. Salad:

    • To assemble one portion of the salad, line a chilled plate with the cos lettuce leaves, followed by the avocado and the rest of the ingredients except the almonds and pomegranate seeds.
    • Once done, drizzle with just the right amount of dressing on top.
  3. Garnish:

    • Garnish with the toasted almond nuts and pomegranate seeds.
