Carbonara Sauce:

  • Chicken Breasts, sliced strips 1200 g
  • Onion, diced 100 g
  • Garlic, diced 30 g
  • Peas 250 g
  • Parsley, roughly chopped 30 g
  • Cooking Cream 500 ml
  • Hot Water 200 ml
  • Black pepper, ground 5 g
  • Beef Bacon, Smoked, chopped 200 g
  • Pasta, penne boiled 2000 g
  • Oil 100 ml

Smoking Step:

  • Smoking gun
  • Flavoured wood chips

Presentation:

  • Basil leaves, fresh 20 g
  • Cheese, Parmesan, Grated 200 g
  1. Carbonara Sauce:

    • Sauté chopped beef bacon until crisp in oil, add chicken breast slices, the onion, garlic, peas and parsley continue sautéing for another 1 minute.
    • Add the cream, water and Knorr Hollandaise Sauce, season with Knorr Chicken Stock Powder and finish with freshly cracked black pepper.
    • Add cooked penne pasta and toss all together.
  2. Smoking Step:

    • Smoke pasta mix while still in the pot.
  3. Presentation:

    • Plate pasta, garnish with basil leaves and parmesan flakes.
