Main Dish:

  • Eggs 20 pc
  • English Muffin, halved 10 pc
  • Water 3 l
  • White Vinegar 150 ml
  • Beef Chorizo, sliced 600 g

Salsa:

  • Tomato, cubes 1 kg
  • Coriander leaves, chopped 30 g
  • Jalapeño chilli brunoise 250 g
  • Onion, small dice 200 g

To Serve:

Garnish:

  • Small watercress sprigs
  1. Main Dish:

    • Poach eggs.
    • Toast english muffins.
    • Cook chorizo until crispy.
  2. Salsa:

    • Combine all ingredients in a bowl, season.

  3. To Serve:

    • Place English muffins on plate top with avocado, chorizo, eggs, salsa and Knorr Garde d’Or Hollandaise Sauce, garnish with watercress.
  4. Garnish:

    • Scatter a few sprigs of watercress.
