A simple soup of shellfish, seaweed, sea urchin roe, garlic and soy. To harvest the roe, turn the urchin upside down and scoop out the roe with a spoon. Urchin roe is also added to a simple seaweed soup, then stirred to dissolve for a salty, rich, light seafood flavour
