Chicken Marinade:

Rice:


Kabsa, a beloved Saudi chicken and rice dish, features marinated chicken leg quarters infused with a blend of ghee, onions, garlic, and a mix of spices, all enhanced with Knorr Professional Chicken Stock Powder for a rich depth of flavor. The rice is cooked with the remaining marinade paste and Knorr Tomato Pronto, ensuring it is as flavorful as the chicken. To add a unique twist, freshly chopped dill is incorporated at the end, providing a fresh and distinctive touch.

Preparation

  1. Chicken Marinade:

    • For the marination, blend all ingredients
    • Pour just enough marinade to coat the chicken. Marinate for 2 hours. Reserve the rest of the marinade for the rice.
    • Sear the chicken or brown the chicken in the oven. Set aside until ready to use.
  2. Rice:

    • In a separate sauce pot, sauté remaining paste in ghee until  light brown.
    • Add the vegetables and Knorr Professional Tomato Pronto.
    • Pour in the water and season with Knorr Professional Chicken Powder and add the rest other dry spices. Taste and adjust seasoning.
    • Add soaked rice and stir well. Cover and turn down the heat to simmer. Cook until the rice is cooked through.
    • When the rice is about to be cooked, arrange the seared chicken on top. Return the cover and let the rice finish cooking.
    • Garnish with fresh dill before serving.
