Classic Brine:

  • Water 100.0 ml
  • Salt 10.0 g
  • Sugar 5.0 g
  • Bay leaves 4.0 pc
  • Peppercorns 5.0 g
  • Percentage is based on weight of wings

Preparation

  1. Classic Brine:

    • Combine salt, sugar and water. Mix to dissolve the salt and sugar. You can opt to heat it up to make it dissolve faster.
    • Let it cool down completely before adding the wings.
    • Brine for a minimum of 2 hrs and max for 3.
    • If the wings are to be used immediately, no need to wash. If not, wash with cold water before storing as it can get salty.
    • Brine overnight for whole chickens.
