Mushroom Truffle Soup:


This recipe aims to demonstrate that Knorr Professional Cream of Mushroom Soup can be elevated to a fine casual dining offering by adding sauteed fresh mushrooms, herbs and a dollop of truffle paste.

Preparation

  1. Mushroom Truffle Soup:

    1. Heat sauce pot over medium heat.  Sweat onions and garlic in butter.
    2. Add the mushrooms.  Season with salt and pepper.
    3. Add the fresh thyme to the mushrooms.  Cook for 5-10 minutes or until the mushrooms are cooked through.
    4. Add the Knorr Professional Cream of Mushroom Soup to the water. Whisk to combine.  Pour the mixture into the pot.  Bring to a boil, then turn it down to simmer.
    5. Taste and adjust seasoning.  Remove the thyme sprig, add the cream and truffle paste.
    6. Finish the soup with Worcestershire sauce and garnish with fresh parsley
